Separate the eggs. Beat the egg whites until stiff peaks form, about 3-4 minutes. In another bowl, beat the sugar and egg yolks together until creamy, about 2-3 minutes. Stir in the quark, semolina, and vanilla flavor. Gently fold the beaten egg whites into the mixture.
Grease a baking dish. Spread the fruit (roughly 150 grams) over the bottom. Spread half of the curd mixture on top. Sprinkle some desiccated coconut over the mixture. Add the remaining curd mixture on top.
Bake in a preheated oven at 200°C / 392°F with top and bottom heat, or at 160°C / 320°F with convection. Place on the middle rack and bake for 35-40 minutes until the surface is golden brown.
