Instructions
- In a shallow bowl, whisk 1 egg with 250 ml milk, salt, and pepper.
- Soak both bread slices in the egg-milk mixture until fully soaked.
- Heat the chili oil in a large pan over medium heat.
- Fry the soaked bread slices for 2-3 minutes per side until golden brown.
- Place the brie and the 4 slices of toast cheese on top of the fried bread.
- Cover the pan with a lid or foil and let sit for 1-2 minutes until the cheese melts.
- Transfer the bread with melted cheese to a plate.
- Add the remaining egg to the remaining egg-milk mixture and whisk together.
- Pour the egg mixture into the pan and cook like scrambled eggs over medium heat for 2-3 minutes, stirring frequently, until cooked through.
- Arrange the scrambled eggs on the plate alongside the cheese-topped bread and serve.
