Prepare the couscous according to the instructions on the packet. Dice the onion, garlic and paprika. Peel and dice the sweet potatoes, drain the chickpeas. Heat the oil in a saucepan and fry the onions, garlic and paprika for about 5 minutes, stir in the cumin and simmer for about 1 - 2 minutes. Deglaze with the tomatoes, add chickpeas and sweet potato cubes. Stir in salt, pepper, ajvar and coriander and let everything simmer for about 15 minutes. When the potatoes are done, the stew is ready. Put the couscous on a deep plate. Pour the finished stew over it and sprinkle with parsley.
