Peel the zucchini and cut lengthways into thin (approx. 5 mm) strips. Fry in a pan with a little fat and season with salt (use sparingly), pepper and garlic. Usually only 3-4 zucchini strips fit in the pan, so this process has to be repeated several times.
You can also put the strips next to each other in a greased flat baking dish, drizzle with oil, season and grill in the oven for about 15-20 minutes. The stripes should be a nice golden brown color.
Place a suitable slice of raw ham on each zucchini strip (cut to size if necessary), roll up and pin in place with a toothpick. Place the rolls next to each other in a flat dish or bowl, drizzle with a little olive oil and sprinkle lightly with balsamic vinegar. Either serve hot (goes well with grilled food) or leave to stand in the refrigerator overnight and serve as a starter.
