Clean the zucchini and peppers and cut into small pieces.
Heat the oil and sauté the diced onion, the salt-grated garlic cloves and tomato paste. Add the vegetables and sweat them too. Deglaze with broth and season with salt, pepper, paprika powder and oregano.
Shape the sausage meat into small dumplings and add them to the pot. Let everything simmer for 15-20 minutes. (Depending on your taste, vegetables are firm to the bite or soft.)
In the meantime, bring the salted water to the boil and sprinkle with the couscous while stirring. Bring to the boil briefly, switch off the stove and let it soak for about 1 minute.
Then stir in the butter.
When the vegetables are cooked, stir in the couscous and serve.
Of course, you can fry the sausage balls separately and mix them in later.
