  1. Drain the peaches. Put 6 peach halves aside. Puree the remaining peaches and place in the refrigerator for an hour. Chill the sparkling wine as well. Half fill the champagne glasses with the peach mixture and then top up with champagne. Halve the 6 peach halves again and cut once so that you can hang them on the glass.
