Instructions

  1. Finely grate the cheese, cut the onions into fine strips
  2. Spätzli: Knead the flour, milk and eggs into a dough until it forms bubbles and can be wiped off with a finger (knead for approx. 15 minutes). Then rub the dough through a Spätzli sieve into boiling water. After about 1 minute of cooking, remove the Spätzli, mix with the grated Appenzell cheese and keep warm.
  3. Garnish: Fry the onions in butter until the onions are nice and brown, then add the breadcrumbs and fry briefly. Now give everything about the Spätzli and enjoy the Appenzellerland.
