Wash and peel the apples and remove the core - then cut into large pieces. Boil half of the apples with a little water in a saucepan until you have a puree. Then add the preserving sugar, lemon juice, cinnamon and the remaining apple pieces to the sauce and mix everything well. Then bring the mixture to a boil, skim off the foam that is formed.
Let the apple mixture boil for 4 minutes and pour into glasses that have been rinsed with hot water. Turn glasses upside down for 5 minutes.
