Instructions

  1. Preparation:
  2. Core the dates and cut into small pieces. Peel and quarter the apple, remove the core and cut into thin slices. Slice open the vanilla pod with a sharp knife and scrape out the pulp. Rub the lemon peel.
  3. Dough:
  4. Beat the butter and sugar until frothy, stir in the eggs, vanilla pulp and lemon zest. Mix the flour with the baking powder and salt and stir into the dough alternately with the milk or buttermilk. Mix in the dates, apple slices and sunflower seeds. Pour the batter into a greased muffin tin or paper liners. Bake in a preheated oven at 180 degrees top / bottom heat or 160 degrees fan oven for about 30 minutes.
