Instructions

  1. Mix the flour in a bowl with salt and baking powder. Add the quark, milk and oil and knead everything well to form a smooth dough, put it in a cool place for 20 minutes.
  2. In the meantime, cut the bacon into fine strips. Peel the onions and cut into thin slices. Fry the bacon in a pan (with little or no fat), remove and set aside. Heat the butter in the pan and sauté the onions until translucent. Take the pan off the stove.
  3. Peel and quarter the apples, remove the core and cut the pulp into thin wedges, add to the onions in the pan and sauté briefly. Whisk the sour cream, crème fraîche, eggs, pepper and salt together.
  4. Preheat the oven to 200 degrees, spread a springform pan or quiche form (diameter 26 cm) with butter. Roll out the dough on a floured work surface and place it in the mold, pressing up a 2cm high edge. Spread the filling on the dough base (onions, apples, bacon, Emmentaler, walnuts) and evenly pour the egg sauce over everything. Bake on the lowest shelf for 40 minutes.
