- Season the salmon cubes with salt, pepper and lemon juice and let it steep for a moment.
- In the meantime, sauté the finely chopped shallots in butter, add the apple cubes and sauté, season with salt and pepper. Finally stir in the cream.
- Drain the salmon cubes, fry them briefly in hot butter and add them to the apple sauce. Serve sprinkled with chives.
