Peel the apples, remove the core and roughly grate.
Spices, egg, liquid ingredients and brown sugar in one bowl, mix the dry ingredients in another bowl. Add moist to dry ingredients and stir in. Fold in grated apple and chopped walnuts.
Pour into well-greased muffin molds (3/4 full) and bake for about 20-25 minutes.
The muffins rise nicely, but collapse again, which doesn`t detract from the taste.
