Apple Cake with Crumb Instructions

  1. In a large bowl, combine 250 grams wheat flour and 150 grams sugar.
  2. Cut 150 grams cold butter into small pieces and add to the flour mixture.
  3. Using a mixer or your fingers, work the butter into the flour and sugar until the mixture resembles coarse breadcrumbs.
  4. Press 2/3 of the crumb mixture firmly into an 18-20 cm baking pan lined with baking paper.
  5. Place the pan and the remaining 1/3 of crumb mixture in the refrigerator for 30 minutes.
  6. While chilling, prepare the filling: Pour 150 ml water into a saucepan and add 50 grams sugar and 1 potato starch.
  7. Stir the mixture over medium heat until it thickens, about 5-7 minutes.
  8. Peel the 3 apples, remove the seeds, and cut into cubes.
  9. Add the apple cubes and 5 grams vanilla sugar to the thickened mixture and stir until combined.
  10. Remove the chilled pan from the refrigerator and pour the apple filling onto the base layer.
  11. Sprinkle the remaining crumb mixture evenly over the filling.
  12. Bake in a preheated oven at 175 °C (347 °F) for 45-50 minutes, until the top is golden brown.
  13. Remove from the oven and cool for at least 2 hours before cutting and serving.
