- In a large bowl, combine 250 grams wheat flour and 150 grams sugar.
- Cut 150 grams cold butter into small pieces and add to the flour mixture.
- Using a mixer or your fingers, work the butter into the flour and sugar until the mixture resembles coarse breadcrumbs.
- Press 2/3 of the crumb mixture firmly into an 18-20 cm baking pan lined with baking paper.
- Place the pan and the remaining 1/3 of crumb mixture in the refrigerator for 30 minutes.
- While chilling, prepare the filling: Pour 150 ml water into a saucepan and add 50 grams sugar and 1 potato starch.
- Stir the mixture over medium heat until it thickens, about 5-7 minutes.
- Peel the 3 apples, remove the seeds, and cut into cubes.
- Add the apple cubes and 5 grams vanilla sugar to the thickened mixture and stir until combined.
- Remove the chilled pan from the refrigerator and pour the apple filling onto the base layer.
- Sprinkle the remaining crumb mixture evenly over the filling.
- Bake in a preheated oven at 175 °C (347 °F) for 45-50 minutes, until the top is golden brown.
- Remove from the oven and cool for at least 2 hours before cutting and serving.
