Instructions

  1. Put the cream and half of the milk in a saucepan. Break the white chocolate into pieces and add to the saucepan. Heat so that the chocolate melts. When the chocolate has melted, add the sugar and egg yolks and mix everything well (if necessary mix briefly with a hand blender).
  2. Peel and core the apples and cut into small cubes. Drizzle with a little lemon juice to prevent them from turning brown. If you want, you can marinate raisins in rum and add them to the apples. Depending on the type of apple, add sugar. The apples shouldn`t be too sweet, they should contrast with the sweet pudding.
  3. Mix the cornstarch thoroughly with the other half of the milk. Pour the starch milk into the warm chocolate milk while stirring and bring everything to the boil, stirring constantly, and simmer briefly until the pudding becomes thick. Then let cool down, stirring occasionally.
  4. Layer the cooled pudding alternately with the apples in glasses and refrigerate until ready to serve. The pudding is particularly tasty if you sprinkle it with sugar before serving and caramelize the sugar with a gas burner.
