Mix the apples and sugar in a bowl. Carefully fold in the cranberries, carrots and nuts. Combine the dry ingredients and stir into the apple mixture. Whisk eggs and oil and stir into the other ingredients.
Fill 18 muffin molds 2/3 full and bake at 180C (fan oven 160C) for 20-25 minutes.
Let cool for 5 minutes after baking, then remove from the mold.
