Beat the cream with the vanilla sugar until combined. Carefully stir in the quark. Add more sugar to taste if desired.
Pour roughly half of the quark cream mixture into a serving bowl. Spread the applesauce over the quark cream. Top with apple pieces (cut into small pieces). Pour the remaining quark cream over the apple.
Toast the almond flakes in a pan over medium heat for 2-3 minutes, stirring frequently, until lightly golden. Sprinkle over the dessert.
Optionally, sprinkle cinnamon powder over the top to taste.
