Mix in the egg and sugar until creamy, stir in the quark, pudding powder, lemon, salt, rum, then grate the peeled apple.
Heat clarified butter in a coated pan and add 1 heaped tablespoon. Put the dough in and flatten it a little, turn the heat down and bake slowly (if the heat is too high, the pancakes will burn) - sprinkle with icing sugar.
An apple sauce with a dollop of cranberry jam or raspberry quark goes very well with it.
