Cut the apples into very small pieces. I always peel the apples, cutting the apples lengthways and crossways starting on one side. Then you can cut apple slices, which break up into cubes. Carry on like this until all that remains is the square core. If the apples brown quickly, you can mix them with a little lemon juice.
Mix the remaining ingredients into a sauce, season to taste and mix with the apples. If you like, you can still let the salad stand. There is actually never this salad twice at a salad buffet.
