Quarter and peel the apple and remove the core. Cut the apple into small pieces, then place in a tall container. Add the vinegar, oil, pepper and salt. Puree everything with a hand blender until it is a homogeneous mass. Add a little more sugar to taste.
I add the lemon juice, depending on the type of apple, so that the sauce doesn`t turn brown when it stands for a long time. If the sauce is too thick, add a little sparkling water.
Super delicious with a mixed platter of iceberg lettuce, tomatoes, cucumber, fresh mushrooms, etc.
