Whisk eggs with salt, sugar, milk and melted butter. Add flour and stir well. Peel, quarter and core the apples and cut into 1/2 cm pieces, knead into the dough.
Bring plenty of salted water to the boil in a large saucepan. Cut smooth dumplings from the dough with 2 tablespoons and shape. Cook the dumplings in the open pot, but don`t let them boil. After about 15 minutes, lift it out with a slotted spoon, let it drip off briefly on paper towels and then transfer to a preheated bowl.
Brown some butter in a pan, then pour over the dumplings. Place the cinnamon mixture in a bowl on the table. Everyone takes as much as they like.
