Instructions

  1. Separate the eggs. Beat the egg whites until stiff. Beat the egg yolks until frothy, add a teaspoon of sugar and a pinch of salt. Alternately add flour and milk. Melt the butter and add the melted butter. Mix in a little lemon zest. Add enough mineral water to make a creamy dough. Put the dough and the egg whites in the refrigerator for 1/2 hour.
  2. In the meantime, prepare the apples. Fill a bowl with a little water and squeeze the lemon in it. Peel the apples and remove the core. Split the peeled apples into wedges and thinly slice the wedges. Place the slices in the lemon water so they don`t turn brown.
  3. Take the batter and the egg whites out of the refrigerator. Fold the apple slices into the batter, then carefully fold in the egg whites.
  4. Heat a pan with a little butter. Put a ladle of batter into the pan and bake the apple pancakes until golden brown on both sides. Sprinkle with sugar, arrange and serve.
