Instructions

  1. Put the flour in a high bowl and mix with the milk, egg, salt and vanilla sugar to form a smooth dough. Peel the apples and cut into fine wedges (drizzle with a little lemon juice if necessary). Let the oil get hot in a non-stick pan. Pour the entire batter into the pan and distribute the apple wedges nicely on the batter. Then sprinkle the brittle over the pancake. Slowly bake the pancake on the smooth side until the dough sets in the middle. Then turn the pancake with the help of 2 spatulas (on the apple side). Now switch off the temperature immediately and finish baking the pancake with the post-heat. Then place a large plate on the pan and turn it over with one swing. If desired, sprinkle with sugar and cinnamon and serve. We like to eat the pancakes with maple syrup.
