Wash, peel and core the apple and cut into small cubes.
Put honey, egg, oil, milk and brown sugar in a bowl and whisk together. Mix the flour, cinnamon, baking powder and salt together and add to the egg mixture, stir in.
Add the chopped apple to the batter and fold in.
Put the dough in a muffin tin lined with paper liners and bake in the oven at about 170 degrees for about 25 minutes.
