Instructions

  1. Beat the eggs over a cup and add to the mixing bowl. Beat with the electric hand mixer until frothy. Stir in the flour spoon by spoon. Add salt and slowly add the milk while stirring. Stir until you have a smooth dough. Let it soak for 5 minutes, then pour in the seltzer water and stir the dough again.
  2. Peel and core the apple and cut into very thin slices. Put the pan on the stove, add 1 tablespoon of oil and heat. Pour some batter into the pan and smooth it out, press a few apple slices into the soft batter. Fry both sides until light brown. Proceed in this way until the dough and apple slices are used up, always adding a little oil for frying.
  3. Sprinkle the apple pancakes with sugar and cinnamon to serve.
