Instructions

  1. Halve the vanilla pod lengthways and scrape out the pulp. Bring both to the boil with the milk while stirring and remove the pod. Beat egg yolks and sugar until frothy, add flour and stir. Pour the mixture into the hot milk, stirring constantly (!) And bring to the boil; Set aside to cool.
  2. Meanwhile, dry roast the almonds and caramelize with 2 tablespoons of sugar.
  3. Just before serving, peel, core and grate the apples. Add the meringue pieces and grated apples to the vanilla sauce. Fold in the whipped cream, divide between 4 deep plates and sprinkle thickly with the almonds.
  4. Tip: pomegranate seeds are a good decoration on the edge of the plate.
