Peel the apples and oranges. Remove the core of the apples. Cut the pulp from the oranges and dice both. Also cut the ginger into very small cubes.
Bring the apple cubes, orange cubes, ginger cubes, preserving sugar, apple cider and lemon juice to a boil. Let simmer for four minutes, stirring constantly. Fill into 5 - 7 twist-off jars rinsed with hot water and close immediately.
Turn the glasses upside down on a kitchen towel and let them cool.
