Peel the apples, cut in half, remove the core and cut the pulp into fine slices. Mix the cream cheese with 1 tablespoon honey, add the apple pieces and season with the lemon juice and vanilla sugar. Put the mixture in a cool place.
Mix the flour, milk, eggs and a pinch of salt into a dough. Heat the butter in a pan, bake 4 pancakes from the batter and keep the pancakes warm.
Toast the nuts in a pan without fat. Add the remaining honey and 2 tablespoons of water and bring the mixture to a boil.
Brush the pancakes with the nut mixture, pour the apple cream on top and roll up the pancakes. Dust with powdered sugar and garnish with lemon balm if necessary.
