Prepare the sauce: stir creme fraiche, sugar, cinnamon and honey with a little milk until smooth and chill.
Prepare apples. Preheat the oven to 200 degrees. Peel, quarter, core and quarter apples again. Melt plenty of butter in a pan and layer the apple eighth nicely. Sprinkle with cinnamon sugar and almonds and put in the oven (for 10 minutes)
Prepare the dough: stir the eggs until foamy. Mix in the flour, baking powder and a pinch of salt.
Putting together: Take the pan out of the oven, carefully pour the batter over the apples, bake for another 20-25 minutes.
