Cover the bottom of the springform pan with baking paper. Lightly toast the almonds in a coated pan without fat and leave to cool on a plate. Peel the apples and cut into eighths. The oven on top / bottom heat: approx. 180 ° C hot air: Preheat approx. 160 ° C.
Beat the eggs in a mixing bowl with a hand mixer on the highest setting until frothy. Slowly sprinkle the sugar mixed with vanilla sugar while stirring and beat the mixture for another 2 minutes. Mix the flour with baking powder and briefly stir in together with the yogurt and oil on the lowest setting.
Smooth out the dough in the springform pan. Spread the apple pieces on the dough and sprinkle with the almonds. Put the tin on the wire rack in the lower third of the oven. Baking time: about 25 minutes. Loosen and remove the springform rim.
Let the cake cool on the springform pan on a wire rack. But also tastes very good warm. It`s one of my favorite cakes. Fruity, light and just delicious.
