Soak the raisins in grape juice. Preheat the oven to 175 ° C fan oven.
Put 400 g flour in a bowl and make a well in it. Crumble in the yeast and sprinkle with 1 tablespoon of sugar. Mix with a little milk and cover and let rise in a warm place for approx. 15 minutes. Add 40 g sugar, egg, milk, 50 g butter and the raisins, which have now been drained, to the pre-dough. Knead everything and cover and let rise for 30 minutes.
Clean, wash, peel and core the apples. Halve the apples and divide into strips 1.5 cm wide. Drizzle with lemon juice.
Grease a baking sheet. Roll out the dough on a floured surface, place it on the baking sheet and form an edge. Grate the marzipan and spread it on the dough. Now distribute the apples on top.
For the crumble mix 125 g of flour with the hazelnuts and 85 g of sugar. Then add 75 g butter and work everything into crumble. Spread the crumble on the cake.
Put the cake in the hot oven and bake for about 40 minutes.
