Instructions

  1. For the base, put the flour, baking powder, salt and sugar in a bowl and mix. Add the butter in pieces and knead in. Then add the egg, egg yolk and water and work into a smooth shortcrust pastry. Roll it out on a lightly floured work surface. To the size of a 24 cm pie form, so that the edge is also lined with it. Cover the mold with foil and place in the refrigerator.
  2. For the filling, peel, halve, quarter and core the apples. Cut the apple quarters into thin slices from the narrow side. Put these in a saucepan, mix with the 100 g sugar and butter and bring to the boil. Simmer for about 5-7 minutes. If not all of the liquid has evaporated, pour it off. Put the apples in a bowl and set aside.
  3. Now preheat the oven to 180 degrees.
  4. In a second bowl, use the whisk to mix and stir the flour, sugar, eggs, vanilla extract and sour cream. Pour this mixture over the apples and stir with a spoon. Set aside for a moment and make the crumble.
  5. To do this, melt the butter, mix the flour, sugar, baking powder and cinnamon, add the melted butter and work into crumble.
  6. Now you fill the apple mixture on the prepared base, smooth it out and distribute the crumble evenly on top. Start from the edge inwards.
  7. The apple pie is then baked in the preheated oven for 50-55 minutes. It should have a golden brown border. Remove and leave to cool completely in the tin on a wire rack.
