Instructions

  1. Knead a shortcrust pastry from flour, butter, 60g sugar, an egg and salt. Chill it for half an hour.
  2. Peel and halve the apples and remove the casing. Cut the curved side several times with a knife and drizzle with lemon juice.
  3. Roll out the dough and place in a size 28 baking pan. Place the apples on the dough with the curved side up.
  4. Mix the remaining eggs with 150g sugar, cream and a little lemon zest and pour over the apples.
  5. Spread the almond leaves over the topping.
  6. Bake the cake at 180 degrees for about 40 minutes until golden brown.
