- Knead a shortcrust pastry from flour, butter, 60g sugar, an egg and salt. Chill it for half an hour.
- Peel and halve the apples and remove the casing. Cut the curved side several times with a knife and drizzle with lemon juice.
- Roll out the dough and place in a size 28 baking pan. Place the apples on the dough with the curved side up.
- Mix the remaining eggs with 150g sugar, cream and a little lemon zest and pour over the apples.
- Spread the almond leaves over the topping.
- Bake the cake at 180 degrees for about 40 minutes until golden brown.
