Instructions

  1. First remove some of the red cabbage liquid from the glass and set aside.
  2. Wash the apples, remove the core and cut the pulp into cubes. Peel the onion and lard it with the cloves.
  3. Heat the lard in a saucepan and sauté the apple cubes for 3 - 4 minutes. Add the honey to the apples and let it caramelize a little - but be careful that it doesn`t burn. Now add the red cabbage, stir well and season with salt and pepper.
  4. Deglaze the red cabbage with the broth, add the peppered onion, bay leaves, juniper berries and cinnamon and cook for 45 minutes over low heat.
  5. After 45 minutes, remove the spices and onion. Mix the cornstarch in the previously removed red cabbage liquid and bind the red cabbage with it. Season everything again with salt and pepper.
  6. Tip: If you have time, always prepare the cabbage one day in advance and warm it up the next day - it will taste twice as good.
