Melt 2 tablespoon butter in a saucepan. Toast the almonds with 5 tablespoons of sugar until they are golden brown and then set aside.
Whip the cream until stiff. In another bowl, whisk the mascarpone with 4 tablespoons of sugar and vanilla sugar. Now fold in the cream and stir to a cream.
Line a bowl with ladyfingers and drizzle with apple juice. Now spread half of the cream onto the ladyfingers. Then spread the applesauce on the cream, then sprinkle half of the roasted almonds over it. Finally, apply the rest of the cream to the almonds. Chill the apple tiramisu until serving.
Just before serving, sprinkle the second half of the almonds evenly over the tiramisu, otherwise the almonds will become soft.
