Instructions

  1. Preheat the oven to 190°C (374°F), or 170°C (338°F) if using a fan oven. Grease and flour a muffin tray, or line the cups with baking tins.
  2. Peel and quarter the apples, then cut into small cubes.
  3. In a medium bowl, combine 300 grams flour, 3 teaspoons baking soda (2 teaspoons + 1 teaspoon), and 1 teaspoon cinnamon.
  4. In a large bowl, beat together 125 g soft butter, 200 g yogurt, and 50 ml milk with 125 g sugar on medium speed for 3–4 minutes until frothy.
  5. Stir the 2 eggs into the wet mixture. Fold in the flour mixture by hand using a spatula until just combined. Fold in the apple cubes.
  6. Pour the batter into the prepared muffin cups, filling each about 3/4 of the way full.
  7. Bake for approximately 15 minutes. While baking, mix 5 tablespoons sugar with 0.5 teaspoon cinnamon. After 15 minutes, remove the muffins from the oven, quickly sprinkle the cinnamon-sugar mixture over each muffin, then return to the oven and bake for another 10 minutes, until golden.
  8. Let the muffins cool in the pan for 5 minutes, then turn out onto a wire rack to cool completely.
