Bring the lemon or lime juice (both tastes delicious when combined!) In a large saucepan to a boil. Add the apple pieces and the vanilla pod and cook (approx. 10-15 min.) Until the apples let water. Then pour the sugar over it (the amount is a matter of taste and it also depends on how sweet the apples are) bring to the boil again briefly and season to taste.
Take the pan off the heat, remove the vanilla pod and, best of all, puree the apples with a hand blender until they are smooth.
We like it cold and also hot.
With such large quantities, I pour the still hot applesauce into glasses that have been rinsed with boiling water, screw the lid on tightly and let it cool upside down.
