Score the apricots crosswise and pour hot water over them, let them steep briefly, remove them from the water and peel off the skin.
Peel the banana and cut into cubes. Put the apricots, bananas, sugar, vanilla sugar and lemon juice in a small blender or puree them finely with the hand blender. Stir the quark in a bowl until smooth and stir in approx. 3/4 of the fruit mixture.
Fill the fruit quark into portion bowls, put a dab of the remaining fruit mixture on top and place in the refrigerator for about 20 minutes.
Quark tastes best when chilled. You are welcome to decorate it with colored sugar, brittle or chocolate sprinkles at the end.
Prepared without sugar, it is also very suitable for older babies and toddlers.
