Instructions

  1. Blanch the apricots in boiling water for 2 minutes, quench in ice water and peel, halve and remove the fruit.
  2. Bring the water with sugar and lemon zest to the boil and place the fruits in it. Simmer over low heat until the fruits crumble. Take the saucepan off the heat, add lemon juice, a few drops of flavor and, if you like, add apricot liqueur to taste. Let it cool down at room temperature.
  3. You can also make the apricot roaster very well in advance. Fill in portions into a sealable container and freeze, but can also be kept in the refrigerator for a few days.
  4. As an accompaniment to any kind of sweet pancake or rice casserole.
