Instructions

  1. Bring the apricots to a boil in 150 ml of water. Reduce heat and simmer. Puree soft apricots (pour off water) with a hand blender - allow to cool.
  2. Mix half of the pureed apricots with the cream cheese.
  3. Set aside some amarettini crumbs for decoration, fold the rest into the cream cheese cream. Add the vanilla flavor and sprinkle sweetness.
  4. Also sweeten the remaining apricot puree.
  5. With the exception of a few raspberries for garnish, distribute the fruit as a base between 4 dessert glasses.
  6. Spread half of the cream cheese cream on top. Spoon on the apricot puree. Finish with the cream cheese cream. Cool well.
  7. Just before serving, decorate with the remaining amarettini crumbs, mint leaves and raspberries.
  8. You can use strawberries instead of raspberries and peaches instead of apricots.
