Fry the chopped onion and minced meat in a little oil and season with salt and pepper. Add the vegetables (zucchini, aubergine and peppers), cut into cubes about 1.5 cm, to the pan and fry for a few minutes. Then add the cut tomatoes and the tomato puree, braise everything for a few minutes and season well with cinnamon powder, salt, pepper and chilli flakes or cayenne pepper.
Prepare the couscous according to the instructions on the packet and serve with it.
