Mix the vinegar and salt with a whisk until the salt has completely dissolved. Then add mustard and pepper and stir well too.
Then gradually beat the oil into the vinegar until an emulsion has formed. If the dressing gets too thick, thin it down with a little poultry stock or apple juice.
