Soak the berries with the amaretto and apple juice the day before. Add the vanilla sugar and sugar. The next day, briefly bring the berries to the boil with the liquid. Dissolve the pudding powder in a little water, stir into the boiling berries and allow to cool.
For the dough:
Mix the butter, egg yolk and sugar until foamy and sieve the flour over it. Add baking powder and vanilla sugar and knead into a dough. Put half of it as a base in a 26 cm springform pan and smooth it out.
For covering:
Mix the quark, pudding powder and sugar, fold in the stiffly beaten egg white.
Spread the quark mixture on the base, place the berry mixture on top and spread the other half of the dough over it as a crumble.
Bake the cake for 40 minutes at 200 ° C in a preheated oven, possibly cover with foil after 30 minutes so that it does not get too dark.
