Halve the leek lengthways, cut the white and light green into fine strips. Peel the garlic and ginger, chop finely and mix with the soy sauce and sambal oelek.
Fry the minced meat in the hot oil until crumbly, add the stock and bring to the boil. Add the pasta, sprouts and seasoning sauce and cook for 4 minutes. Season with salt and pepper. Roughly chop the coriander and sprinkle over it before serving.
