Process the zucchini into pasta with a julienne grater or a spiralizer. Cut the spring onions and mushrooms into slices, chop the garlic and coriander. Mix the dressing ingredients with the whisk.
Heat vegetable oil in a pan and fry the mushrooms in it for 5 minutes, season with salt and pepper. Stir in zucchini noodles, spring onions and garlic and cook for 3 - 5 minutes until the zucchini noodles are still slightly firm to the bite. Stir in the dressing and simmer briefly.
Put the pasta in a bowl and garnish with coriander, fried onions and sesame seeds.
