Wash, peel and halve the cucumber lengthways; Scrape out the seeds with a teaspoon, cut the cucumber halves into thin slices and place in a bowl.
Heat the rice vinegar with 4 tablespoons of water, sugar and a pinch of salt until the sugar has dissolved; Stir approx. 1/4 teaspoon Sambal Oelek into the liquid
Very finely chop 1 large clove of garlic and pour over the cucumber slices together with the vinegar mixture, season with coriander and ginger, mix everything well and put in a cool place.
The salad tastes best when it can sit well chilled for a few hours. Before serving, season again with the spices.
