Cook the pasta according to the instructions on the packet, drain and set aside.
In the meantime, heat the cooking oil in a pan on the highest setting. Add the ginger and garlic and sauté briefly. Then add the leek and, if necessary, the ham and season with salt, pepper and soy sauce. Cook everything at medium temperature for 5 to 10 minutes.
Mix the pasta with the leek. Whisk the eggs and season with salt and pepper, then pour over the leek and noodle mixture. Turn the hotplate down to low temperature. Cover the pan with a lid and let everything set for 10 minutes.
