Instructions

  1. Fry the minced meat in a saucepan with a little butter or oil and set aside.
  2. In the same saucepan, sauté the chopped onions with a little butter or oil until translucent. Pour in the meat or vegetable stock. Cut the wild garlic into small pieces and cook in the broth for about 5 minutes.
  3. Take the pot off the stove and use the hand blender to puree the wild garlic and onions. This step can be omitted if wild garlic and onions are preferred in pieces. Add the peeled and cut asparagus to the broth and let it steep for about 10 minutes until it is soft. Add the fried minced meat and finally stir in the processed cheese.
  4. I find the soup so spicy enough thanks to the processed cheese, if you want you can of course add salt and pepper to taste.
