- Cut the ham into strips approx. 2 cm wide.
- Peel the asparagus, cut off the woody ends. Cut the asparagus diagonally into pieces approx. 2-3 cm long.
- Cut the onion into fine cubes. Cut the chives into rolls.
- Heat the oil in a large pan with a lid and fry the chopped onion in it until translucent (do not fry).
- Add the asparagus pieces to the onion in the pan, season with salt and cook covered for about 5 minutes.
- Pour in the cream and cook on a low heat for another 5 minutes (without the lid).
- In the meantime, cook the noodles in salted water until they are firm to the bite.
- Drain the pasta and collect approx. 200 ml of the pasta water.
- Season the asparagus sauce with a little white pepper, cayenne pepper and the lemon juice and season again to taste.
- Mix in the pasta, pasta water and the ham strips and let steep for a few more minutes.
- Serve sprinkled with chives.
