Asparagus Tarte Flambée with Wild Garlic Pesto

  1. Knead the ingredients for the dough together well and place in a warm place for about 30 minutes to rise.
  2. In the meantime, clean the asparagus, if necessary peel, cut in half and cut into pieces about 2-3 cm long. If you want, you can fry or steam the asparagus briefly in a pan with a little oil (especially recommended for thick, white asparagus).
  3. Preheat the oven to 180 degrees top / bottom heat.
  4. Roll out the dough thinly on a baking sheet lined with baking paper and brush with crème fraîche. Then spread the wild garlic pesto (best homemade - recipe in my cookbook) on top and season with salt and pepper. Pluck the ham into small pieces (if necessary, diced ham) and spread over the dough with the asparagus (and possibly halved cherry tomatoes). Bake at 200 degrees for about 12-15 minutes until it`s nice and crispy.
  5. If you like, you can garnish the tarte flambée with freshly grated Parmesan or rocket. The imagination knows no limits.
