Instructions

  1. Rinse the asparagus. Whites completely, peel the lower third of the green. Cook the white sticks for approx. 12 minutes, the green ones for approx. 8 minutes in salted water with 1 teaspoon of butter and sugar. Lift out, drain and transfer to a greased baking dish.
  2. Preheat the oven to 250 degrees. Rinse off the sage, shake dry, pluck off 12 leaves. Divide the mozzarella into 12 slices, cover with 1 sage leaf each. Halve the ham lengthways and wrap around 1 cheese slice each. Place the packet on the asparagus.
  3. Bake until the cheese starts to melt. Chop some sage and brown in the remaining butter. Season with lemon juice and pour over the asparagus. Serve, garnish with the remaining sage.
